Hummus
Hummus
Makes 3 cups.
Ingredients:
2 cups cooked chickpeas, liquid reserved 
1/2 cup tahini (sesame paste)
1 clove garlic, peeled 
1 teaspoon ground cumin 
2 teaspoons kosher salt 
Ground black pepper 
1/4 cup extra-virgin olive oil 
Juice of 1 lemon
Steps:
1. Place all the ingredients in a blender and blend on medium speed until combined. 
2. Taste it. 
3. If it needs more salt and lemon juice, add some (about ½ more lemon.) If it’s too thick, turn on the motor, and add chickpea liquid or water to create a smooth puree.
