Kale Chips

Kale Chips

Ingredients:
1 small bunch kale (about 6 ounces, Lacinato or curly)
1 to 3 teaspoons extra-virgin olive oil
1/4 teaspoon kosher salt, plus more as needed

Steps:
1. Place two oven racks in the oven to divide the oven into thirds. Heat to 300°F. 

2. Separate the inner ribs of the kale from the leaves. Tear the leaves into 3-inch pieces.

3. Wash the kale in a salad spinner and spin it dry. Place them on a clean kitchen towel and cover with another kitchen towel to pat them dry. 

4. Place the kale leaves in a large bowl and drizzle with olive oil. Start with 1 teaspoon, massaging the oil into the leaves and add more oil as needed. Season all over with salt. 

5. Lay the kale on two sheet pans, fitted with a cooling rack, if you have one. Spread them out so they are not overlapping.

6. Bake in the oven until kale chips are very crisp, about 20 minutes. Taste one and season with salt and pepper, as needed. Let chips cool completely.
