Kid-Friendly Greek Salad

Kid-Friendly Greek Salad
Serves 4.

Ingredients:
12 ounces thin-skinned cucumbers (about 1 English or 4 Persian cucumbers)
10 to 12 ounces ripe tomatoes (about 4 medium or 1 pint cherry tomatoes)
1/2 cup pitted kalamata olives (optional)
1/4 cup extra-virgin olive oil
1 to 2 tablespoons red wine vinegar
2 tablespoons finely chopped mint or parsley
4 ounces feta cheese, sliced or crumbled (optional)

Steps:
1. Slice the cucumber lengthwise in half. Then slice crosswise into 1/4-inch thick half moons, and place in a large bowl. Cut the tomatoes into 1-inch pieces and place them in the bowl of cucumber along with the olives and olive oil. Toss to coat in oil.

2. Just before serving, drizzle with vinegar, and season with mint or parsley, a few big pinches of salt and pepper. Fold to combine. Taste and add more salt and pepper, or vinegar, as needed. If you choose, top with feta. Recipe by Jill Santopietro.
