Chocolate-Chocolate Brownies

Chocolate-Chocolatey Brownies
Makes 16 (2x2-inch) brownies

Ingredients:
Cooking spray oil or butter, for greasing pan 
8 tablespoons (1 stick) unsalted butter, cut into 8 pieces
4 ounces bittersweet chocolate (70% cacao), roughly chopped
1 cup all-purpose flour
2 tablespoons natural unsweetened cocoa powder
1/2 teaspoon fine salt
1 cup packed dark brown sugar
2 large eggs
1 1/2 teaspoons vanilla extract
1/2 cup semisweet chocolate chips

Steps:
1. Heat the oven to 350°F and arrange a rack in the middle. Line an 8-inch square baking dish with 2 (8-inch wide by 12 inch long) pieces of parchment paper or aluminum foil and then coat with cooking spray or butter.

2. Place butter and chocolate in a medium saucepan over medium-low heat, stirring constantly, until melted and smooth (or even better, melt in microwave). Remove from heat to cool slightly. 

3. In a medium bowl, sift together the flour, cocoa powder, and salt; set aside.

4. In a large bowl, vigorously whisk together the brown sugar, eggs, and vanilla until well mixed. While whisking quickly, slowly pour in the chocolate mixture until well-combined.

5. Fold the flour mixture into chocolate mixture until just incorporated and no white streaks remain. Fold in chocolate chips.

6. Transfer batter to the dish and bake until a tester inserted in the center of the brownies comes out clean, 25 to 30 minutes. Remove from oven and cool completely before cutting.
